The most delicious, easy-to-make, healthy Coconut & Raspberry Cookies!
INGREDIENTS (makes 8)👩🏼🍳
100g Ground Almonds
50g Desiccated Coconut
1 tsp Vanilla Extract
1 tsp Baking Powder
20g Dark Chocolate (I used Lindt)
• Pre-heat oven to 180’C.
• Add all of the ingredients (minus the dark chocolate) into a mixing bowl and stir until combined, the mixture should be firm but wet, you may need to add a little water if it’s too dry.
• Bake for 15-20 mins until they turn a golden colour.
• Leave to cool, then melt the chocolate and drizzle over the top!
